Health Benefits of Cilantro or Corriander Leaves

 


If you are like me then you are always looking to get a leg up on eating healthy and how to improve your longevity. Of course, there are many ways to do this and some of these include dietary means, cardiovascular exercise, prayer and meditation and other ways as well.

If you are specifically looking at dietary ways to become healthier then you really should consider the health benefits of cilantro. The benefits of eating fresh cilantro are many. Let's take a closer look at this wonderful food.

So, why is cilantro so healthy? Well, Cilantro comes from the leaves of the coriander plant. Some people refer to this herb as "Chinese Parsley." Whatever name it goes by the fact is out and that is that there are many health benefits to eating fresh cilantro. Why is it so important to eat it fresh? Actually, this is true for almost any fruit and certainly all herbs. When you buy fresh you do not have to worry about preservatives or anything else. In fact, it is recommended that not only do you buy it fresh but if possible organic.

The number one health benefit of Cilantro has to do with its rich antioxidant properties. Like many of your dark greens, this herb is rich in antioxidants and helps to lower cholesterol, probably helps reduce the incidence of cancer, and has many other health benefits as well.

If you are looking at some ways to consume enough of this herb on a daily basis then you may want to follow my approach. I must warn you that you really should like salsa and/or guacamole. Personally, I love eating avocados and this probably comes out of my time having lived in Southern California for many years. The way I make sure I get enough cilantro on a regular basis is to dice it up and include it along with garlic and tomatoes in order to make a great-tasting and very healthy guacamole dish.

However you decide to eat it just make sure that you consume this herb as there are many great health advantages of cilantro.

Thalipit Recipe

 


This thalipit recipe I learned from my mother-in-law. For this you have to prepare seperate thalipit flour. Here is the list of ingredients for thalipit flour.

Thalipit Flour

  • Rice - 4 cups
  • Chana dal (yellow gram ) - 1 cup
  • Black gram or Urad Dal - 1 cup
  • Sabudana or tapioca seeds - 1 tea spoon
  • Beaten rice or poha - 1 table spoon
  • Methi or fenugreek seeds - 1 teaspoon
  • corriander seeds or dhaniya - 2 teaspoon
  • Jeera or cumin seeds - 1 tea spoon
Dry roast rice, chana dal and black gram seperately. Do not over roast these. Get these milled in a flour mill and store in an airtight box. This can also be used as chakli flour.

Making Thalipit


Ingredients for thalipit

Thalipit flour - 2 cups
Wheat flour - 3 cups
Cucumber - 1 ( grated along with skin)
Green chillies - 3 to 4 ( or according to taste)
Red chilli powder - 2 teaspoons. 
Garlic - 10 cloves (optional)
Jeera - 1 teaspoon
Curd - 1 cup
Ghee - 2 teaspoon
Turmeric - 1/2 teaspoon
Sesame seeds - 3 teaspoons
Finely chopped coriander (cilantro) leaves - 1 tablespoon
Hing - 1/4 teaspoon
Salt to taste.
Lemon juice - 2 teaspoon
Water - quantity sufficient

Grind garlic, green chillies, lemon juice, jeera to a coarse paste.  Add all ingredients together and mix well. If needed add water little by little and kneed everything to a dough of chapati dough consitency. Keep this dough aside after covering it with a plate.

After 30 minutes kneed the dough , and squeeze small portions of this dough and make small round balls. Sprinkle some wheat flour on a rolling board and roll these balls with a rolling pin into small round rotis. Cook these on tawa with cooking oil or ghee. Roast this thalipit on both sides. Always take care to maintain medium flame or heat. 

Savour this with butter, curd and pickle. Or else you can also make chickpea Usli.

Three tasty recipes with figs By Carol A Hill

 Covering their shame with fig leaves, the first couple on the earth evoked a wrath so powerful that mankind never forgot the legend behind those figs. Wearing only a crown of fig leaves as they stood in front of the cheering crowds, ancient Olympian athletes received handfuls of figs for winning various Olympic events. It was mentioned, Cleopatra ate figs from a woven

basket while poisonous asps stung one of her exposed extremities.

Allowed freedom for one day a year, Roman slaves sat under a fig tree eating as many figs as they desired while enjoying the fruits of their labor. Somehow, figs and the human body have covered a lot of history since that remarkable time.

A meal of figs begins with a soup that has an exotic touch of cumin and paprika interacting with the colorful flavor of tomatoes and garnished with a fresh fig. The recipe below is

from a Penelope Cases cookbook.

Cumin Scented Tomato Soup With Fresh Figs

1-Tlb. olive oil

2-cloves garlic, peeled and finely sliced

4-cloves garlic, minced

1- onion, chopped

1/2-cup green bell pepper, chopped

1-lb ripe tomatoes, skinned, seeded and chopped

1/2-tsp.paprika

1-1/2-cups, canned crushed tomatoes

Salt to taste

1-bay leaf

1-Tlb. parsley, chopped

1-tsp. ground cumin

3-cups water

1-cup bread crumbs

4-fresh figs

Directions: 

In a soup pot: Heat the olive oil and brown the first two cloves of garlic. Remove it from the heat and set aside. Add the onion, the minced garlic and the bell pepper. Saute the ingredients until they are wilted. Add the browned garlic,the tomatoes and the water. Season with the paprika, the ground cumin and the salt. Add the parsley and the bay leaf. Toast the bread crumbs and cut the fresh figs diagionally. Top the soup with the bread crumbs and a fresh fig.

Figs and strawberry jello are combined to make a strawberry fig

preserve that is good whether spooned over vanilla ice cream or on a homemade biscuit.

Strawberry Fig Preserves

6-cups fresh figs, mashed

5-cups sugar

1-large package of strawberry jello

Directions: 

In a large saucepan: Combine the ingredients and bring them to a boil stirring constantly cooking them for five

minutes. Sterlize some canning jars. Pour the mixture into them and seal the jars.

The crunchy texture of jicama is combined with the softness of fresh figs and served with an orange cinnamon vinaigrette.

1-jicama,washed, peeled and cut into two-inch strips

8-fresh figs,chopped

1-tsp. sugar,

1/4-cup red onion,minced

1-Tlb. cilantro,minced

Orange Cinnamon Vinaigrette:

1-orange, juiced

1/4-tsp. cinnamon

1-tsp.sugar

Directions: 

Add the chopped figs and one teaspoon of the sugar

to boiling water and cook for three to four minutes until they

are softened. Let the fig mixture cool. In a salad bowl: whisk the orange juice, the cinnamon and one teaspoon of the sugar.

Add the jicama, the minced red onion and the cilantro. Lightly

combine the cooled figs with the salad ingredients and coat them

well with the orange vinaigrette.

Sun dried figs are hand dipped into chocolate for a dessert

that any bon bon lover will enjoy eating. The recipe below is

from the Valley Fig Growers Association.

Chocolate Fig Bon Bons

(Makes 25 bon bons)

8-ounces sun dried figs, stems removed

2/3-cup hazelnuts or almonds, toasted

8-vanilla wafer cookies, crushed

1/3-cup cup powdered sugar

1/4-cup rum

1-tsp. grated orange peel

3-oz. semisweet or white chocolate

Vegetable oil

Directions: 

Process figs, hazelnuts or almonds and vanilla wafers into a food processor until they are finely ground. Add the powdered sugar, rum and orange peel and process them until they are well mixed into the fig mixture. Dampen hands and shape the mixture into one and one-fourth inch balls. Arrange close together on a baking sheet or wire rack. In a small microwave-safe bowl heat the chocolate on high for one to two minutes, stirring after one minute. Add a few drops of the vegetable oil if needed to make the chocolate thin enough to drizzle. Dip the tips of a fork in the chocolate and quickly drizzle it over the fig balls, or dip each fig ball into the melted chocolate. Chill until the chocolate is set. Store the fig bon bons in an airtight container up to one week.

Cooking since the age of fifteen, the author has always enjoyed eating and cooking with figs.

Dalgona Idli


This is just for fun not for eating. 

Prepare Mysore Mallige Idli Batter. Put some batter in a small glass coated with oil (any oil sunflower oil, sesame oil, coconut oil etc). Steam it till batter gets hardened. Dissolve 2 teaspoons of instant coffee in 2 tea spoons of water. Take two cups with idli batter and add this coffee mix to these cups to get a dark shade and light shade. (mix a small quantity of coffee for one cup and a large quantity of coffee in another. Pour dark mix on hardened idli in glass. Steam again . Garnish with light coloured batter.  I have named it as dalgona idli

Adding funny twists while cooking enhances your mood and increases creativity. Inspired by one of my face book friend I tried this art with idli. You can perfect the idli art and can be more creative.

Raw Mango Juice (Aam ka panna)

Now it is season for raw mangoes. In this sweltering weather, raw mango juice or aam ka panna comes as a boon to quench our thirst. Water, sweetening jaggery, tangy raw mango, aroma of cardamom and edible camphor (pachcha karpura) makes us to crave for more. This juice helps to supply energy instantly and rehydrates body. Calms mind and satiates your taste buds. Here is a quick recipe for this juice. This is usually prepared during Sri Ramanavami or Chaitra navami in India

Ingredients:


raw mangoes

Raw mangoes - 2
Jaggery - 1 cup (you can add more if you need)
Cardamom - 5
Edible Camphor (pachcha karpura) - 1/4 pinch (don't put more. It turns juice bitter).

Method:

Wash raw mangoes well and cook them in cooker or you can also boil them in water till cooked. Powder jaggery and dissolve it in 4 cups of water. Allow the cooked mangoes to cool down. Remove its external skin and seed.  Mash the pulp. You can also mix it in blender. Mix this pulp in jaggery water. Stir it well.  Strain this juice mix to remove mango fibers. Add powdered cardamom and edible camphor. Mix well. Aam ka panna is ready to drink.

This recipe is very popular in karnataka. Usually this is prepared during functions and very easy to prepare. Here is a quick look at recipe.

Ingredients for Ash Gourd Halwa ( Boodukumbalakai Damroot)

Ash gourd - cleaned and grated - 6 cups
Sugar - 2 1/2  cups (according to sweetness required
Saffron strands or Kesari - 1 tea spoon
Powdered cardamom - yelakki - 2 tea spoon
Broken Cashew - 1 cup

Preparation of Ash Gourd Halwa ( Boodukumbalakai Damroot) - Method

Take out the skin of ash gourd (picture given below). 



Grate it. Don't squeeze its water. Transfer grated ash gourd to a woke (kadahi or Bandle) . Cook this in medium flame , till its water evaporates. It takes around 20 - 30 minutes for this. Keep stirring in between. You need not stand in front of it. You can do other jobs. But in between don't forget to stir this. 

As water evaporates the volume of grated gourd reduces. When 95% of water is evaporated add sugar and saffron strands. Mix them well. This mixture starts thickening as it boils and looses water. It starts leaving the sides of woke. At this stage add ghee or clarified butter. Mix well again. As ghee starts separating from halwa , turn off flame.

Take a tampering ladle. Add a table spoon of ghee and roast cashews in it. Pour this on damroot. Add cardamom powder. Give a good mix . Serve when it is hot. Watch your sweet toothed hubby's face. You can see a glow radiating from his face and Pot Belly ;) . 

NOTE: Few add grated khova to this. This is optional. I prepare both types. Being a hardcore Mysorean I always use Nandini Khova which is fresh and tasty. (For this measurement you can add 1 cup khova while adding sugar.)

Roasted Gram Chutney (Canteen Style)


I loved this chutney prepared in  Marimallappa's canteen in Mysore. I studied in this institution . I am sure all Marimallapites of our times definitely agree with me.

My brother used to eat 2 idlis with a serving bucket full of this chutney. And owner if the canteen was kind enough to serve this as much as we wished.

I wish I can travel back on time machine and enjoy this.

Here is the Recipe

Ingredients

Roasted gram (hurigadle or putani) - 1 cup
Freshly grated coconut - 1/3 cup
Green chillies - 2
Fresh curry leaves - 1/2 cup
Finely chopped Coriander leaves - 1 tea spoon
Sugar - 1pinch
Tamarind - 1cm
Asafetida - 1 pinch
Mustard - 1/2 tea spoon
Urad dal 1/2 tea spoon
Oil 2 tea spoons

Method of preparation


Dry roast curry leaves, tamarind, green chilli and roasted gram till they become fragrant. Allow this to cool.

Put everything along with grated coconut, corriander leaves, salt, a pinch of asfitida and sugar to mixer jar adding little water. If you like watery consistency, add more water and blend. 

Tampering


Place a tampering ladle on stove , add oil. When it is hot add mustard seeds . When mustard seeds splutter add urad dal and turn off stove. Allow urad dal to turn golden colour. Add asafetida and pour this on chutney. Enjoy with mallige idli or Mysore Masala Dosa.

Chana dal (chickpea lentils) salad (ಕಡ್ಲೆ ಬೇಳೆ ಕೋಸಂಬರಿ)


This is my favourite weight loss food, which brims with protein, vitamins and anti-oxidants. But very very low in calories. Since it has plenty of protein and fibers, it fills stomach and stays for a very long time. I usually eat this tangy dish before starting my meal. This helps me to cut carb portion. Here is the recipe. Just try it.

Ingredients
Soaked Chana dal 1 cup - (wash 1/2 cup chana dal. Soak it for 3 hours. Wash it again and drain the water. )
Fresh grated coconut 1/4 cup
Finely chopped coriander  2 tea spoon
Lemon juice 1 tea spoon
Asafetida 1 pinch
Finely chopped green chilly 1 (optional) or grounded black pepper
Salt to taste.

Take a bowl and mix all the ingredients well. Eat a cup of this before breakfast, lunch and dinner. 
Add this to your ayurvedic weight loss diet.

Lemon Rice With Green Peas


Lemon rice is a popular dish in India specially in South India. This tangy yellow coloured dish is favourite of many. Few prefer this with onion and garlic. But I prefer this recipe without these.

Ingredients
Lemon large size  2
Fresh Green peas 1/2 cup
Cooked rice. 1.5 cups
Turmeric  1/4 tea spoon
Groundnut (peanuts)  1/4 cup (Read Ayurveda Health Benefits of Peanuts or Ground Nut)
Green chilli 2
Finely chopped coriander  1/4 cup
Curry leaves 10 to 15
Mustard  half tea spoon
Cumin seeds (Jeera)  half tea spoon
Asafetida 1 pinch
Cooking oil 1 table spoon
Salt to taste

Spread rice in a large bowl. Keep a kadai or pan on stove. Add oil to it. Add mustard, cumin seeds (jeera) to oil. When they splutter add chopped chillies, curry leaves, ground nut and turmeric. When ground nuts start splitting , add fresh green peas. Mix well and cook by covering for 2 minutes. switch off stove. Pour this tampering on rice. Add salt, lemon juice and finely chopped coriander . Give this a good mix. Serve with curd rice and pickle.

Susla A North Karnataka Delicacy

Susla is a famous tea time snack or breakfast recipe in North Karnataka. It is savoured with KT Chai. Here goes simple recipe.

Ingredients
Puffed rice ಕಡ್ಲೆಪುರಿ -  3 cups
Roasted chick pea (ಪುಟಾಣಿ, ಹುರಿಗಡಲೆ)- 1 cup , powdered
Onion - 2 finely chopped (optional)
Green chilli - 2 finely chopped
Curry leaves -10 to 15
Peanuts - 1/2 cup
Coriander leaves - 1/4 cup
Lemon juice - 2 tsp
Turmeric - 1/2 tea spoon
Mustard - 1 tsp
Jeera or cumin seeds - 1 tsp
Asafetida - 1 pinch
Cooking oil - 20 ml
Salt to taste

Heat a kadai or woke. Put oil and heat it. Add mustard and jeera. When they splutter add green chilli, curry leaves, and peanuts. Roast everything well. Add onion and fry till the raw smell is lost. Add turmeric and asafetida. 
When onion is getting fried, take a big bowl of water and add puffed rice to it. Just wash it (don't soak it) squeeze water  and then transfer to woke. Add powdered puffed gram , finely chopped coriander, lemon juice, little sugar. Adjust salt. Mix well and cover the lid. Cook for 2 minutes. Serve it hot with hot chai.

Daal Methi

Dal Methi Ingredients

Tuvar dal or  yellow lentils - 1/2 cup
Masoor dal or orange lentils - 1/2 cup
Methi leaves or fenugreek leaves - 1 cup
Ginger -1 inch sliced into Julienne (Read Ayurveda Uses Benefits of Ginger
Onion - 2 medium size finely chopped (optional)
Garlic - 5 -6 cloves crushed (optional)
Tomatoes - 3 puried
Curry leaves -10
Mustard seeds - 1 tea spoon
Red chilli - 2
Turmeric - 1 tsp
Red chilli powder - 2 tsp
Green chilli - 1slit
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Amchoor powder - 1 tea spoon
Ghee - 4 tsp
Cooking Oil - 1 tbsp
Salt to taste.

Wash and Soak both lentils for 30 minutes. Transfer lentils to a cooker add 3 cups of water, turmeric, salt and a tea spoon of ghee. Cook for 2 whistle . 

Heat a pan . Add oil and 1 tea spoon of ghee. When it is hot add cumin seeds, mustard seeds, curry leaves and red chillies. Add ginger , garlic and saute. Add onion and fry till it leaves oil. Add green chilli. Add tomato puree and cook well till oil separates. Add turmeric, chilli powder, amchoor powder , coriander powder and cumin powder. Mix well. Add finely chopped methi leaves mix well cover and cook for 10 mins.

Add cooked dal and adjust salt according to taste. Bring it to boil and remove from flame.

Heat a ladle, add remaining ghee and a tea spoon of red chilli powder.  Pour this seasoning on dal. Enjoy with roti , chapati, jeera rice or plain rice

Gooseberries and raw tamarind pickle

This pickle is speciality of Mysore region. It tastes good with anything and everything. Little ghee along with this pickle is heaven. It is very easy to make and does not contain any preservatives.

Ingredients:

  •  1/2 kg Indian gooseberries or amla or bettada nallikai
  • 1/2 kg unripe raw tamarind fruits or hunasekai
  • 1/4 kg magali beru or swallowroots or Decalepis hamiltonii
  • 1/4 kg mavinakai Shunti or mango ginger or Curcuma amada.
  • Few green chillies
  • Red chilli powder of your choice 300 GM's
  • Mustard seeds 150 GM's
  • Methi seeds or fenugreek seeds -2 tea spoon
  • Solid Hing or asafoetida -1 tea spoon (Coarsely ground) (read Health Benefits of Hing or Asafoetida )
  • Turmeric- 2 tea spoon
  • Salt 400 GM's
  • Water 3  litres
Mango Ginger or Mavinakai Shunti
Magali Beru or Swallowroot or Makali Beru


Method

  1. First wash gooseberries, Swallowroots , Mango ginger, tamarind and green chillies. Spread them on a clean cloth to dry. 
  2. Boil water with salt. Turn off the gas.Add tamarind to this and close the lid. Leave it to cool. This makes tamarind soft.
  3. Dry roast fenugreek or methi seeds. 
  4. In a mixer jar add mustard seeds, roasted methi seeds, turmeric and asafoetida and grind them to a fine powder. Add chilli powder and grind it again. Pickle masala powder is ready. 
  5. Peel external skin of mango ginger and magali beru. Cut them into round slices. Remember to remove the hard fiber from the centre of swallow root or magali beru. 
  6. Cut amla into medium pieces. Keep the seeds intact
  7. Cut green chillies into 1 inch pieces
  8. Squash the softened tamarind  in salt water till all its pulp gets into salt water. Now strain this water through a sieve to remove the fibers and seeds. Collect the juice in a big vessel. Now Tamarind juice is ready.
  9. Take prepared pickle masala powder in a big mixie jar add required quantity of tamarind juice and grind it to a soft paste.
  10. Mix this paste into tamarind juice and add all cut fruits and roots. Stir well to break the lumps of pickle masala paste. 
  11. Store it an air tight container.
Enjoy with curds rice, dosa, idli or with freshly cooked hot rice.

Ayurveda Health Benefits Of Drinking Water



75% of earth’s area is covered by water. Water is the major component of all living beings and it is the major constituent of human cells. Ayurveda considers water (aap or jala) as one of panchamahabhutas. ( Panchamahabhutas  constitute human body). Water provides a good medium for most of the biological processes that happen in living beings. Dehydration or loss of water from body causes dry skin, lowered energy, muscle cramps, reduced alertness and affects vital organs.

Potable water:

Water which is not harmful to health and has all qualities to serve as drinking water is called as potable water. The potable water must be free from heavy metals, suspended particles and pathogens like bacteria.

Ayurveda recommends rain water which is devoid of impurities, microbes as pure potable water. This is called as “Gangambu”. Such rain water is healthy, refreshing, cools body, increases alertness and satiates taste buds. The properties of pure Gangabu or rain water are narrated as follows.

“Jeevanam tarpanam hridyam hlaadi buddhiprabhodhanam |
Tanvavyaktarasam mrushtam sheetam laghvamrutopamam||”

In present environmental scenario the polluted sky, dusty winds, chemicals spewed from industries get dissolved with rain water causing acid rains. It is not advisable to drink such rain water. Even in ayurveda it has been mentioned that rain water has to be used after analyzing its purity.

The water contaminated with mud, weeds, algae and microbes is referred as “Dushtajala” in ayurveda. Dushtajala or contaminated water should not be used for any purpose as it is harmful to living beings.

Benefits of cold  and warm water an - ayurvedic view

Ayurveda explains properties of cold water as follows

“Sheetam madaatyayaglaanimoorchaachardishramabhramaan ||  Trushnadaahapittasravishanyambu niyacchati ||”

Cold water reduces intoxication of alcohol. It relieves fatigue, giddiness, vomiting sensation and quenches thirst. It alleviates symptoms of increased pitta, rakta and poison.

Deepanam paachanam kantyam laghushnam basthi shodhanam ||
Hidmaadmaanaanilashleshmasadyahashuddhinavajware |

Home Remedies With Jaggery

Common Cold: mix 1 tea spoon of powdered gur with 2 tea spoons of beetle leaves’ juice. Add ½ cup of warm water and sip slowly.

Consuming 1 small piece of jaggery daily, in empty stomach with a glass of water helps to relieve menstrual problems.

Regular use of this helps to reduce incidences of anemia.

Grind ½ tea spoon of gur, ½ tea spoon sesame seeds and few drops of milk to a fine paste. Applying this paste on forehead helps to relieve migraine headaches.Consumption of jaggery relieves headache.

Grind 1 tea spoon jaggery with 2-3 black peppers. Keep this paste on tongue and slowly chew it to get relief from cough.

Note: Diabetic patients should be careful while using this as it may increase blood glucose level.

Soya Chunks Biryani





Soya chunks Biryani is a very quick and easy recipe. We know soya beans are nutritious and supply plenty of proteins.  The combination of Soya chunks, vegetables and rice constitute an ideal meal for kids in one go. Here goes the recipe

Ingredients

1.       Basumathi Rice – 1 ½ cups
2.       Soya chunks – medium sized ¾ th cup
3.       French beans – hand full (thinly sliced)
4.       Carrot – 1 medium sized (thinly sliced)
5.       Green peas – ¼ cup
6.       Onion – 2 small sized thinly sliced
7.       Tomato – 2 medium sized finely chopped
8.       Mint leaves – ½ cup coarsely chopped
9.       Ginger garlic paste – 1 tea spoon
10.   Green chilli – 1 (slit in middle)
11.   Curd – ¼ cup
12.   Ghee  - 3 tea spoon
13.   Cooking oil – 2 table spoon
14.   Cumin seeds – 1 tea spoon
15.   Black pepper corn – 5-6
16.   Clove – 2-3
17.   Cinnamon – ½ inch
18.   Cardamom – 3-4
19.Bay leaf – 1
20.   Turmeric – ½ tea spoon
21.   Red chilli powder – ½ tea spoon
22.   Garam masala – ½ tea spoon
23.   Salt to taste


Preparation of soya chunks:  Boil soya chunks in water until they become soft. Drain the water and rinse these chunks in running tap water. Squeeze these to remove excess water and keep them aside

Marinating -Add little salt, turmeric, red chilli powder and garam masala to curd. Take carrots, beans, peas and soya chunks in a bowl and add spiced curd. Mix them well and keep aside.

Preparing rice- Wash Basumathic rice in plain water. Add 1 ½ cups of water, little salt and a tea spoon of ghee to it. Pressure cook rice. Take care not to overcook it.

Preparation of Soya chunks Biryani:  Place a woke or kadai on stove. Pour cooking oil. When oil gets sufficiently heated add cumin seeds. When they splutter add remaining spices (15-19). Add onion and fry them till they become transparent. Now add ginger garlic paste and fry it. Add green chilli, tomato, ¼ cup of mint leaves, marinated vegetables and soya chunks.  Mix them well and cover the kadahi with a lid. Cook in a low heat. When vegetables are cooked add cooked rice, remaining ghee and mint leaves. Mix everything well and cover the lid. Heat this in low flame for 3 minutes. Allow the aroma of spices steep into rice. Serve this hot with cucumber raita  or tomato Cucumber raita.

Methi baingan Sabzi- Egg plant / Brinjal with fenugreek




Methi baingan sabzi recipe is an Indian recipe. This was taught to me by my daughter in law Deepa Burli. Here goes the method to prepare this delicious subzi.

Ingredients:
1.       Egg plant or Baingan or Brinjal – larger variety (the one used for bartha) – 1 Diced in  2 cms cubes and soaked in water
2.       Fresh Methi leaves or  fenugreek leaves –  1  cup - finely chopped
3.       Onion – 1 large – thinly sliced
4.       2 green chillies – slit
5.       Cooking oil – 2 tea spoon
6.       Salt to taste

Heat a non stick wok or kadahi . Pour oil in it. When oil is sufficiently heated add green chillies . When green chillies crackle add onion and fry them till they become transparent.  Transfer diced egg plant or baingan to wok and mix it well with onion. Add salt and simmer the flame. Cover a lid on wok and allow it to get cooked in low heat. When egg plant is half cooked add fresh fenugreek leaves and mix well. Cover the lid once again and leave it on low flame for 5 minutes. Serve this hot with chapathis.

Health facts of ingredients

Onion: Onion helps to rejuvenate liver, normalize digestion, relieve constipation and increase appetite. Hence it is very beneficial in piles (hemorrhoids) , constipation, jaundice and indigestion. White onions are recommended in bleeding disorders to reduce bleeding. Hence it is used in conditions like bleeding piles and bleeding through nose. Onions are used in home remedies to reduce cough. Onion and its seeds are known to help in erectile dysfunction, premature ejaculation and male infertility. It helps to increase libido, quality and quantity of semen. It is a very good vajikara herb. It helps to reduce itching on skin.

Egg palnt or Brinjal or Baingan: It has high fiber content and helps in easy bowel movement. The anti oxidants present in this vegetable help to prevent cancer and coronary heart disease. It has good potassium content, hence helps to control blood pressure and maintain water electrolyte balance.

Fenugreek leaves : This green leafy vegetable is store house of iron. Hence this can be liberally used in anemia. It has good fiber content which helps in digestion and relieves constipation. Fenugreek leaves have property of controlling fluctuating blood sugar level and is recommended for diabetic patients.It contains protein and Vitamin K. Regular use of fenugreek leaves help in good growth of hair.
